Crazy Chocolate Cake

Ingredients
  

Directly into an 8” square cake pan sift:

  • 1 1/2 cups flour
  • 1 cup sugar
  • 3 tbsp cocoa
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt

Mock Butter Icing:

  • 1/2 cup butter
  • 1 cup icing sugar
  • 1 tsp vanilla
  • 1 tbsp hot water
  • 1 tbsp cold water

Instructions
 

  • Make three holes in the dry ingredients.
  • Into one hole pour 1 tsp. vanilla.
  • Into another pour 6 tbs. cooking oil. Into third pour 1 tbsp. vinegar.
  • Pour 1 cup cold water over all and beat with a fork until smooth.
  • Bake at 350ºf for 25-30 minutes.
  • Soften butter and beat in icing sugar gradually.
  • Beat thoroughly.
  • Add cold water then hot.
  • Add vanilla.

Cranberry-White Chocolate Shortbread

Ingredients
  

  • 2 cups butter softened
  • 1 cup sugar
  • 4 cups flour
  • 1 pkg Baker’s White Chocolate chopped, 6 squares
  • 1 1/2 cups dried cranberries

Instructions
 

  • Preheat oven to 350ºF.
  • Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy.
  • Add flour; mix well.
  • Stir in chopped chocolate and cranberries.
  • Drop rounded tablespoons of dough, 2’ apart, onto ungreased baking sheets.
  • Flatten each ball of dough slightly.
  • Bake 10-14 minutes or until lightly browned.
  • Cool 5 minutes on baking sheets.
  • Remove to wire racks; cool completely.

Cranberry Squares

Ingredients
  

  • 1 1/2 cups rolled quick cooking oats
  • 1 1/2 cups flour
  • 1 1/2 cups firmly packed brown sugar
  • 1 tsp baking powder
  • 3/4 cup cold butter

Instructions
 

  • Preheat over to 350ºF.
  • Mix oats, flour brown sugar and baking powder in large bowl until well blended.
  • Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Press 2/3 of the oat mixture firmly onto bottom of 9” square baking pan.
  • Spoon Brandied Cranberry Sauce over crust; sprinkle with remaining oat mixture.
  • Bake 30 minutes.
  • Cool completely.
  • Cut into 20 squares to serve.

BRANDIED CRANBERRY SAUCE:

  • Preheat oven to 300ºF.
  • Place 4 cups fresh or frozen cranberries in 13x9” baking dish.
  • Sprinkle evenly with 2 cups sugar.
  • Cover and bake for 1 hour.
  • Remove from oven.
  • Stir carefully, then stir in 1/3 cup brandy or orange juice.
  • Pour into jars or serving dishes.
  • Store in refrigerator up to 3 weeks.

Ingredients
  

  • 3 eggs
  • 1 cup corn syrup
  • 1 cup sugar
  • 2 tbsp butter melted
  • 1 tsp vanilla
  • 3/4 cup chopped fresh or dried cranberries
  • 3/4 cup coarsely chopped pecans

Instructions
 

  • Preheat oven to 350ºF.
  • Prepare piecrust and fit to muffin or tart pans.
  • Beat eggs lightly in mixing bowl.
  • Add syrup, sugar, melted butter and vanilla, mixing until blended.
  • Sprinkle cranberries and pecans in tart shells, dividing evenly.
  • Pour filling on top, filling two-thirds full.
  • Bake for 20-25 minutes or just until set and golden.

Cookies ‘n’ Crème Fudge

Ingredients
  

  • 3 pkgs white chocolate baking squares 6-0z
  • 1 can Eagle Brand Sweetened Condensed Milk 14-oz, NOT EVAPORATED
  • 1/8 tsp salt
  • 2 cups coarsely crushed chocolate crème-filled sandwich cookies OREO’s, about 20 cookies

Instructions
 

  • Line 8” square baking pan with foil.
  • In heave saucepan (or double boiler) over low heat, melt chocolate WITH Eagle Brand and salt.
  • Remove from heat.
  • Stir in crushed cookies.
  • Spread evenly in prepared pan.
  • Chill 2 hours or until firm.
  • Turn fudge onto cutting board.
  • Peel off foil; cut into squares.

  • 1 can Eagle Brand Sweetened Condensed Milk 14-oz, NOT EVAPORATED
  • 2 tsp vanilla extract
  • 1 tsp to 1 1/2almond extract
  • 2 packages flaked coconut (5 1/3 cups 7-oz

Instructions
 

  • Preheat oven to 325ºF.
  • Line baking sheets with foil; grease and flour foil; Set aside.
  • In large bowl, combine Eagle Brand, vanilla and almond extract.
  • Stir in coconut.
  • Drop by rounded teaspoons onto prepared sheets; with spoon, slightly flatten each mound.
  • Bake 15 to 17 minutes, or until golden.
  • Remove from sheets; cool on wire rack.

Ingredients
  

BATTER:

  • 3 cups flour
  • 1/4 tsp salt
  • 1 cup sugar
  • 4 tsp baking soda
  • 1 1/2 cup milk
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup butter melted

TOPPING:

  • 1 cup butter soft to the point of almost melted
  • 1 cup brown sugar
  • 2 Tbs flour
  • 2 Tbs cinnamon

GLAZE:

  • 2 cups powdered sugar
  • 5 Tbs milk
  • 1 tsp vanilla

Instructions
 

  • In a large bowl, mix all the ingredients together except for the butter.
  • Once mixed; slowly pour in the butter.
  • Stir into the batter.
  • Pour into a greased 9x13 pan.
  • For the topping, mix all the ingredients together until well combined.
  • Drop evenly over the batter and swirl with a knife.
  • Bake at 350° for 30-40 minutes.
  • While the cake is still warm drizzle the glaze over the cake.

In large bowl add and combine well:

  • 2 eggs
  • 1/2 cup oil
  • 1 cup milk
  • 1 tsp vanilla

In smaller bowl combine well:

  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/4 cup pure cocoa
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Combine wet and dry mixtures and fold together gently until just mixed.
  • Spoon into prepared pan.
  • Bake for 20 minutes.
  • Remove from pan and cool on rack. 400°F

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 5 tsp baking powder
  • 3/4 tsp salt
  • 1 cup white sugar
  • 1/3 cup chocolate chips or butterscotch
  • 1 1/4 cups natural bran green box
  • 2 eggs well beaten
  • 1 cup milk
  • 1 tsp vanilla
  • 1/2 cup vegetable oil

Instructions
 

  • Sift together first four ingredients.
  • Site in chips and bran.
  • Mix together last four ingredients. Add to flour mixture. Stir to blend.
  • Fill muffin cups and bake at 375ºF for 20 minutes
