Sweet & Sour Sauce

Ingredients
  

  • 1 1/2 cup vinegar
  • 1/2 cup water
  • 2 tbsp white sugar
  • 2 cups ketchup
  • 1 tsp salt

Instructions
 

  • Bring to boil.
  • In separate bowl add 1 cup water to 4 tbsp corn starch.
  • After first mixture comes to boil add cornstarch mixture and cook 5 minutes.
  • Remove from heat.

Instructions
 

  • Use 2-9x13” pans, (can half recipe for 1 pan).
  • Grease pan with butter.
  • Line bottom with buttered white bread (crusts removed).
  • Sprinkle over bread: ½ lb. cheese grated, 2 lb. cooked cubed ham (or cooked bacon), chopped green onions.
  • Over this pour: 22 beaten eggs with 9 cups milk, salt & pepper to taste.
  • Add lots of slice mushrooms.
  • Cover pan & refrigerate overnight.
  • Cook at 350º about 1 hour 15 minutes

Rice Pudding (Skinny Version)

Ingredients
  

  • 2 cups 2% milk
  • 2 cups cooked white rice
  • 1/4 cup honey
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup raisins
  • 1/2 cup egg substitute
  • 2 tsp vanilla

Instructions
 

  • Combine first 7 ingredients in large pot.
  • Simmer for 15 minutes.
  • Measure egg product and ½ cup hot mixture – add to eggs and stir into saucepan.
  • Stir until thickened.
  • Stir in vanilla.
  • Cover with plastic wrap.

Ingredients
  

  • 1 qt milk
  • 1/2 cup sugar
  • 1/2 cup rice
  • 3 eggs
  • 1 tbsp sugar
  • nutmeg for colour

Instructions
 

  • Combine milk, ½ cup sugar and rice in a saucepan.
  • Bring to a boil.
  • Reduce heat and simmer for an hour or until rice is mushy.
  • Stir frequently to prevent sticking or burning.
  • In a bowl beat eggs and 1 tbsp sugar until thick.
  • Add milk and rice mixture a spoonful at a time until eggs are thick.
  • Pour into serving bowl.
  • Add nutmeg for colour on top.
  • Cool before serving.

Marshmallow Salad (Aunt Bonnie’s)

Ingredients
  

  • 1 pkg miniature marshmallows
  • 1 box of lemon jello
  • 2 envelopes of dream whip
  • 1 16 oz can of crushed pineapple

Instructions
 

  • Make jello and let stand until jello is partially thickened.
  • Drain pineapple, mix dream whip according to directions on envelope.
  • Mix all ingredients together and let thicken in fridge.
  • Top with nuts and cherries.

Larry's Favorite Cookies

Servings 42 large cookies

Ingredients
  

  • 1 cup rolled oats
  • 1/3 cup butter
  • 1 cup boiling water
  • 3/4 cup cornmeal
  • 1 tbs sugar
  • 2 tsp chicken or beef stock
  • 1/2 cup milk
  • 1 cup shredded cheese
  • 1 egg beaten
  • 2 cups white or wheat flour

Instructions
 

  • Preheat oven to 325°F.
  • Grease cookies sheets.
  • In large bowl combine rolled oats, butter and water; let stand for 10mins. Stir in cornmeal, sugar, boullion, milk, cheese and egg. Mix well.
  • Add flour 1 cup at a time, mixing well after each addition to form a stiff dough.
  • On floured surface, knead in remaining flour until dough is smooth and no longer sticky, 3 to 4 mins.
  • Roll or pat out dough to 1/2 thickness; cut with a cookies cutter.
  • Place 1 inch apart.
  • Bake for 35 to 45 mins or until golden brown.
  • Cool completely.
  • Store loosely covered

Foolproof Dark Chocolate Fudge

Ingredients
  

  • 3 cups Semi-sweet chocolate chips (1 1/2 pkgs, 12-oz each)
  • 1 can sweetened condensed milk 14 oz, NOT EVAPORATED
  • Dash salt
  • 1 cup chopped walnuts
  • 1 1/2 tsp vanilla extract

Instructions
 

  • Line 8 or 9” square pan with foil or waxed paper, extending foil over edges of pan.
  • Melt chocolate chips in top of double boiler.
  • When chips are completely melted and smooth remove from heat and add sweetened condensed milk and salt.
  • Stir in walnuts and vanilla.
  • Spread evenly into prepared pan.

Notes

To make white chocolate fudge melt the chips and condensed milk TOGETHER. Then add pistachio nuts and dried cranberries. Can also substitute almond extract for the vanilla.

Ingredients
  

  • 3 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp shortening
  • 2 eggs
  • 3/4 cup milk

Instructions
 

  • Heat fat or oil to 375°F in deep fat fryer.
  • Measure 1½ cups flour and the remaining ingredients into large mixer bowl.
  • Blend ½ minute on low speed, scraping bowl constantly.
  • Beat 2 minutes on medium speed, scraping bowl occasionally.
  • Stir in remaining flour.
  • Turn dough onto well-floured cloth-covered board; roll around lightly to coat with flour.
  • Roll dough gently 1/2 inch thick.
  • Cut with floured doughnut cutter.
  • With wide spatula, slide doughnuts into hot fat.
  • Turn doughnuts as they rise to surface.
  • Fry 2 to 3 minutes or until golden brown on both sides.
  • Carefully remove from fat; do not prick the surface.
  • Drain.
  • Serve plain, sugared or frosted.

Eagle Brand Rice Pudding

Ingredients
  

  • 2 1/2 cups water
  • 1/2 cup uncooked long grain rice
  • 1 tsp cinnamon stick or 1/4ground cinnamon
  • 2 piece lemon rind 1/2”
  • dash salt
  • 1 can Eagle Brand Sweetened Condensed Milk 14-oz, NOT EVAPORATED MILK
  • Additional ground cinnamon

Instructions
 

  • In medium saucepan, combine water, rice, cinnamon, lemon rind and salt; let mixture stand 30 minutes.
  • Bring mixture to a boil, stirring occasionally. Add Eagle Brand; mix well. Return to a boil; stir.
  • Reduce heat to medium. Cook uncovered stirring frequently, 20-25 minutes or until liquid is absorbed to top of rice.
  • Cool (pudding thickens as it cools). Remove cinnamon stick and lemon rind. Sprinkle with additional cinnamon. Serve warm or chilled

Cookies ‘n’ Crème Fudge

Ingredients
  

  • 3 pkgs white chocolate baking squares 6-0z
  • 1 can Eagle Brand Sweetened Condensed Milk 14-oz, NOT EVAPORATED
  • 1/8 tsp salt
  • 2 cups coarsely crushed chocolate crème-filled sandwich cookies OREO’s, about 20 cookies

Instructions
 

  • Line 8” square baking pan with foil.
  • In heave saucepan (or double boiler) over low heat, melt chocolate WITH Eagle Brand and salt.
  • Remove from heat.
  • Stir in crushed cookies.
  • Spread evenly in prepared pan.
  • Chill 2 hours or until firm.
  • Turn fudge onto cutting board.
  • Peel off foil; cut into squares.
