Combine milk, ½ cup sugar and rice in a saucepan.
Bring to a boil.
Reduce heat and simmer for an hour or until rice is mushy.
Stir frequently to prevent sticking or burning.
In a bowl beat eggs and 1 tbsp sugar until thick.
Add milk and rice mixture a spoonful at a time until eggs are thick.
Pour into serving bowl.
Add nutmeg for colour on top.
Cool before serving.
