Ingredients
  

  • 3/4 cup finely chopped almonds
  • 1 cup flour
  • 1/2 cup margarine
  • 1-80 oz pkg cream cheese
  • 1 cup icing sugar
  • 1 pkg vanilla instant pudding
  • 1 1/2 cups milk
  • 1 pkg chocolate instant pudding
  • 1 1/2 cups milk
  • 1 large container Cool Whip

Instructions
 

  • Combine almonds, flour and margarine.
  • Press into 9x13” pan.
  • Bake at 350ºF for 20 minutes.
  • Cool.
  • Mix cream cheese and icing sugar together until creamy, then spread on cooled base.
  • Beat together vanilla pudding with milk.
  • Let stand 2 minutes, then spread on top of cream cheese layer.
  • Beat together chocolate pudding and milk.
  • Let stand 2 minutes, spread over vanilla layer.
  • Let stand 15 minutes.
  • Top with Cool Whip.

Ingredients
  

  • 1 1/2 cups white sugar
  • 1 1/2 cups corn syrup
  • 1 pkg butterscotch chips
  • 1 3/4 cups peanut butter
  • 5 to 6 cups rice krispies
  • 1 tsp vanilla

Instructions
 

  • Combine sugar and corn syrup in large dutch oven.
  • Cook over medium heat.
  • Bring to a full boil.
  • Remove from heat.
  • Add vanilla and butterscotch chips.
  • Mix well.
  • Add peanut butter.
  • Sit until melted.
  • Stir in rice krispies.
  • Drop by spoonful onto waxed paper.

  • 3 cups finely crushed vanilla wafers
  • 1 cup sifted icing sugar
  • 3 tbsp cocoa
  • 1/4 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup light corn syrup
  • 1/4 cup rum
  • Icing sugar

Instructions
 

  • Combine wafers, sugar, cocoa and salt.
  • Mix in pecans, corn syrup and rum and stir until well-blended. Mixture is should be quite stiff.
  • Roll in icing sugar or cocoa.

BASE

  • 1 oz unsweetened chocolate cut up
  • 1 cup All purpose flour
  • 1 cup sugar
  • 1 tsp baking powder

FILLING

  • 1 pkg cream cheese (8 oz) softened (reserving 2 for frosting)
  • 1/4 cup margarine or butter softened
  • 2 tbsp flour
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 cup chopped nuts
  • 1 pkg chocolate chips (6-oz)
  • 2 cups miniature marshmallows

FROSTING

  • 1/4 cup margarine or butter
  • 1/4 cup milk
  • 1 oz unsweetened chocolate cut up
  • Reserved cream cheese
  • 3 cups powdered sugar
  • 1 tsp vanilla

Road Trip Cookies

Ingredients
  

  • 2 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 6 oz semisweet chocolate; chopped 1/4” pieces
  • 3/4 cup granulated sugar
  • 3/4 cup tightly packed light brown sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 3 cups M&Ms peanuts
  • 1/4 lbs butter 1/2 cup

Instructions
 

  • Preheat the oven to 350ºF.
  • In a sifter combine the flour, baking soda and salt.
  • Sift onto a large piece of wax paper and set aside until needed.
  • Heat 1” of water in the bottom half of a double boiler over medium heat.
  • With the heat on, place the semisweet chocolate in the top half of the double boiler.
  • Use a rubber spatula to stir the chocolate until completely melted and smooth, about 4-5 minutes.
  • Transfer to a 1-quart bowl and set aside.
  • Place the granulated sugar, light brown sugar and butter in a 7-quart bowl.
  • Use a stiff rubber spatula (or a wooden spoon) to cream the ingredients together until smooth.
  • Add the eggs and vanilla extract and mix to incorporate.
  • Add the melted chocolate and mix until combined.
  • Add the sifted dry ingredients and thoroughly combine.
  • Add the M&M’s, mixing to incorporate.
  • Using 3 heaping tablespoons of dough for each cookie (approximately 3 oz.), portion 6 cookies, evenly spaced, onto each of 3 non-stick baking sheets (this is a hefty cookie, so don’t crowd).
  • Place the baking sheets on the top and centre racks of the preheated oven and bake for 14 minutes.
  • Remove cookies from oven and cool to room temperature on the baking sheets, about 30 minutes.
  • Store the cookies in a tightly sealed plastic container

Notes

you can use salted butter just don't add the 1/2 tsp of salt

  • 2 cups 2% milk
  • 2 cups cooked white rice
  • 1/4 cup honey
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup raisins
  • 1/2 cup egg substitute
  • 2 tsp vanilla

Instructions
 

  • Combine first 7 ingredients in large pot.
  • Simmer for 15 minutes.
  • Measure egg product and ½ cup hot mixture – add to eggs and stir into saucepan.
  • Stir until thickened.
  • Stir in vanilla.
  • Cover with plastic wrap.

Ingredients
  

  • 1 qt milk
  • 1/2 cup sugar
  • 1/2 cup rice
  • 3 eggs
  • 1 tbsp sugar
  • nutmeg for colour

Instructions
 

  • Combine milk, ½ cup sugar and rice in a saucepan.
  • Bring to a boil.
  • Reduce heat and simmer for an hour or until rice is mushy.
  • Stir frequently to prevent sticking or burning.
  • In a bowl beat eggs and 1 tbsp sugar until thick.
  • Add milk and rice mixture a spoonful at a time until eggs are thick.
  • Pour into serving bowl.
  • Add nutmeg for colour on top.
  • Cool before serving.

Raspberry-Filled White Chocolate Bars

Ingredients
  

  • 1/2 cup margarine or butter
  • 1 pkg white vanilla chips (12 oz) or 2 (6oz) white chocolate baking bars, chopped
  • 2 eggs
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp amaretto or almond extract
  • 1/2 cup raspberry spreadable fruit or jam
  • 1/4 cup sliced almonds toasted

Instructions
 

  • Heat over to 325ºF.
  • Grease and flour 9” square pan or 8” square baking dish.
  • Melt margarine in small saucepan over low heat.
  • Remove from heat.
  • Add 1 cup of the white vanilla chips (or 1 chopped white chocolate baking bar). LET STAND; DO NOT STIR.
  • In large bowl beat eggs until foamy.
  • Gradually add sugar, beating at high speed until lemon-coloured.
  • Stir in white vanilla chip mixture.
  • Lightly spoon flour into measuring cup; level off.
  • Add flour, salt and amaretto; mix at low speed just until combined.
  • Spread half of batter (about 1 cup) in greased and floured pan.
  • Set remaining batter aside. Bake for 15-20 minutes or until light golden brown.
  • Stir remaining 1 cup white vanilla chips (or chopped baking bar) into remaining half of batter; set aside.
  • Melt spreadable fruit in small saucepan over low heat.
  • Spread evenly over warm, partially baked crust.
  • Gently spoon teaspoonfuls of remaining batter over fruit. (Some fruit may show through batter).
  • Sprinkle with almonds.
  • Bake for an additional 25-35 minutes or until toothpick inserted in center comes out clean.
  • Cool 1 hour or until completely cooled.
  • Cut into bars

Ingredients
  

  • 1 can sliced peaches in syrup undrained, 29 oz
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 1 tbsp margarine or butter
  • 1 cup Bisquick
  • 1/4 cup milk
  • 1 tbsp sugar
  • 1 tbsp margarine or butter melted and cooled slightly

Instructions
 

  • Heat oven to 400ºF.
  • Heat peaches in 3-qt. saucepan over medium heat until warm.
  • Stir together cornstarch and water; stir
  • into fruit.
  • Heat to boiling, stirring constantly; boil and stir 1 minute.
  • Pour into ungreased 2-quart casserole.
  • Dot with 1 tbsp. margarine.
  • Stir remaining ingredients until soft dough forms.
  • Drop dough by spoonfuls onto hot fruit.
  • Bake uncovered 30 minutes.
  • Serve warm with ice cream.

Notes

You can substitute 1 can of peach, blueberry or cherry pie filling add 1 tsp of almond extract.
MAKE SURE FRUIT IS HOT BEFORE DROPPING DOUGH ONTO FRUIT!!!

  • 2 cups flour

  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp ginger

  • 1/4 tsp cloves
  • 1 1/2 cups brown sugar
  • 1/2 cup soft margarine
  • 3/4 cup cooked pumpkin
  • 1/4 cup milk
  • 2 eggs

Instructions
 

  • Mix ingredients.
  • Turn batter into a greased 13x9x2” pan.
  • Bake at 350ºF for 35-40 minutes.
  • Cool in pan and ice.
