Ingredients
  

  • 1 lb lard
  • 5 cups sugar
  • 5 eggs
  • 1 1/2 qt Buttermilk
  • 1 pkg Quaker Bran (10 oz) green box
  • 8 cups flour
  • 5 tsp baking powder

Instructions
 

  • Mix well.
  • Add 4 tsp soda dissolved in ~ 1//4 cup hot water.
  • Mix well.
  • Bake at 375°F for ~20 minutes.

Notes

Keeps well in refrigerator.

Servings 12 large muffins

Ingredients
  

  • 1 medium-large orange
  • 1/2 cup orange juice
  • 1/2 cup chopped dates
  • 1 egg
  • 1/2 cup margarine room temp
  • 1 1/2 cup cups all-purpose flour or 1+ 1/2whole-wheat
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup white sugar
  • 3/4 tsp salt

Instructions
 

  • Cut orange in eights; remove seeds, put in blender.
  • Add orange juice and dates.
  • Blend until liquefied.
  • Add egg and margarine.
  • Blend again.
  • Into large bowl, sift dry ingredients.
  • Add blender mixture to flour mixture.
  • Stir to blend.
  • Fill muffin cups and bake at 400ºF for 20 minutes

Muffin Doughnut's

Ingredients
  

  • 3/4 cup sugar
  • 1 large egg
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 cup veggie oil
  • 3/4 cup milk
  • 1 tsp vanilla
  • 2 tbs melted butter
  • cup approx 1/2sugar with cinnamon

Instructions
 

  • Preheat oven to 350°F.
  • Lightly grease a muffin tin (I use the mini muffin tin).
  • In a large bowl, beat together sugar and egg until light in colour.
  • In a small bowl, whisk together flour, baking powder, salt and nutmeg.
  • Pour into the egg mixture and stir to
  • combine.
  • Pour in the veggies oil, milk and vanilla and stir together.
  • Divide batter evenly into the muffin tin.
  • Bake approx 10 - 15 minutes.
  • While muffins are baking melt your butter and mix cinnamon into you 1/2 cup of sugar.
  • When the muffins are done lightly brush
  • the top of each muffin with the butter and roll in the sugar to coat.
  • Cool on a wire rack.

Miracle Whip Pumpkin Pecan Muffins

Ingredients
  

  • 4 eggs
  • 2 cups granulated sugar
  • 3/4 Miracle Whip dressing
  • 1 can pumpkin 14 oz
  • 1 cup chopped pecans
  • 2 3/4 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon

Instructions
 

  • Heat overt o 400ºF.
  • Beat eggs and sugar with electric mixer on medium speed until well blended.
  • Stir in dressing, pumpkin and pecans; mix well.
  • Mix flour, baking soda, salt and cinnamon.
  • Stir flour mixture into pumpkin mixture.
  • Beat 2 minutes on medium.
  • Spoon batter into greased or paper-lined muffin pans, filling half full.
  • Bake 15-20 minutes or until toothpick inserted in centre comes out clean.
  • Cool 5 minutes; remove from pans.

  • 1/3 cup raisins or more
  • 1 cup cornmeal
  • 1 1/2 cups buttermilk
  • 1 1/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup honey

Instructions
 

  • Pour boiling water over raisins.
  • Combine cornmeal with 1 cup buttermilk.
  • Into large bowl, sift dry ingredients.
  • In medium bowl, beat egg, oil, money and remaining buttermilk.
  • Add liquid mixture to cornmeal and buttermilk.
  • Stir liquid mixture into dry. Add drained raisins.
  • Fill muffin cups and bake.
  • 400°F - 20 minutes

  • 1 cup mashed bananas 2 or 3 medium
  • 1 cup miracle whip dressing
  • 3/4 cup white sugar
  • 2 cups flour (2/3 whole-wheat, 1-1/3 all-purpose)
  • 2 tsp baking soda
  • 1/2 tsp salt

Instructions
 

  • In medium large bowl beat bananas.
  • Beat in sugar and salad dressing.
  • Stir in flour, soda and salt just until moistened.
  • Fill muffin cups and bake at 350ºF for 20-25 minutes

In large bowl add and combine well:

  • 2 eggs
  • 1/2 cup oil
  • 1 cup milk
  • 1 tsp vanilla

In smaller bowl combine well:

  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/4 cup pure cocoa
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Combine wet and dry mixtures and fold together gently until just mixed.
  • Spoon into prepared pan.
  • Bake for 20 minutes.
  • Remove from pan and cool on rack. 400°F

  • 1 3/4 cups all-purpose flour
  • 5 tsp baking powder
  • 3/4 tsp salt

  • 1/3 cup chocolate chips or butterscotch
  • 1 1/4 cups natural bran green box
  • 2 eggs well beaten
  • 1 cup milk
  • 1 tsp vanilla
  • 1/2 cup vegetable oil

Instructions
 

  • Sift together first four ingredients.
  • Site in chips and bran.
  • Mix together last four ingredients. Add to flour mixture. Stir to blend.
  • Fill muffin cups and bake at 375ºF for 20 minutes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole-wheat flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 2/3 cup milk
  • 1 egg
  • 1/3 cup vegetable oil
  • 3/4 cup brown sugar
  • 2 medium red apples (cored unpeeled)
  • 1/4 cup nuts

Instructions
 

  • Sift flour, baking powder, soda, salt and cinnamon into a large bowl.
  • Into electric blended put milk, egg, oil, sugar, nuts and apple (cut in eights).
  • Blend well.
  • Pour into flour mixture.
  • Stir only until mixed.
  • Fill muffin cups and bake.
  • Before baking sprinkle batter in muffin cups with sugar and cinnamon

Almond Bran Muffins

Ingredients
  

  • 1 3/4 cups All-Bran
  • 1 1/4 cups fat-free evaporated milk
  • 1/4 cup unsweetened applesauce
  • 1/4 cup butter or stick margarine melted
  • 1/2 tsp almond extract
  • 1 cup whole-wheat flour
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp baking powder
  • 1 1/4 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 2 egg whites lightly beaten

Instructions
 

  • In a bowl, combine the bran, milk, applesauce, butter and almond extract; let stand for 5 minutes.
  • Meanwhile, combine the dry ingredients in a large bowl; stir in egg whites and bran mixture.
  • Fill muffin cups coated with non-stick cooking spray two-thirds full.
  • Bake at 350ºF for 15-20 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to a wire rack.
  • Serve warm
