Almond Bran Muffins

Ingredients

All-Bran

fat-free evaporated milk

unsweetened applesauce

butter or stick margarine
melted

almond extract

whole-wheat flour

cup
packed brown sugar
1 1/2

baking powder
1 1/4
tsp
ground cinnamon

tsp
baking soda

egg whites
lightly beaten
Instructions
In a bowl, combine the bran, milk, applesauce, butter and almond extract; let stand for 5 minutes.
Meanwhile, combine the dry ingredients in a large bowl; stir in egg whites and bran mixture.
Fill muffin cups coated with non-stick cooking spray two-thirds full.
Bake at 350ºF for 15-20 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm
