Zucchini Bread

Ingredients
  

  • 2 egg
  • 1/2 cup oil
  • 1 cup brown sugar
  • 1 cup zucchini
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup cloves
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 cup chopped walnuts

Instructions
 

  • Mix together in a bowl.
  • Pour batter into loaf pan and sprinkle a mixture of cinnamon,brown sugar, and a dash of nutmeg on top and bake at 350°F for 55 mins

  • 2 eggs
  • 1/4 cup liquid honey
  • 1/2 cup oil
  • 1 cup shredded zucchini
  • 1 tsp lemon rind
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/8 tsp nutmeg

Instructions
 

  • Preheat oven to 375ºF.
  • Beat eggs, honey and oil.
  • Stir in zucchini, lemon, nuts and raisins.
  • Sift remaining ingredients and stir into wet ingredients.
  • Stir to blend.
  • Bake 5 minutes – reduce heat to 350ºF and bake for an additional 35 minutes.

Two Hour Buns

Ingredients
  

  • 2 eggs
  • 2 pkg dry yeast
  • 2 cups warm water
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1/2 cup oil
  • 5-6 cups flour

Instructions
 

  • Dissolve yeast in warm water and sugar.
  • Beat eggs, sugar, oil and water until foamy.
  • Add flour and salt, mix.
  • Let rise and punch down once.
  • When risen again, shape into buns, let rise and bake 12-15 minutes at 375ºF.

  • 4 cups flour
  • 4 tsp baking powder heaping
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup sugar

  • Mix dry ingredients together.
  • Work in lard and add milk.
  • Bake in a 450ºF to 500ºF oven until lightly browned.

  • 1 cup of lard
  • 1 cup of sugar
  • 2 eggs
  • 1 cup apple sauce
  • 1/2 cup evaporated milk
  • 1 tsp vinegar

  • 3 cups flour
  • 1-1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup walnuts

Instructions
 

  • Beat shortening, sugar and eggs.
  • Add applesauce, milk, vinegar, vanilla and spices. Mix.
  • Add flour and soda. Mix.
  • Add nuts and raisins.
  • Refrigerate for 1 hour.
  • Drop by spoonful.
  • Bake at 375ºF degrees for 15-20 minutes.

Savory Cheddar Bread

Ingredients
  

  • 2 cups all-purpose flour 500 mL
  • 4 tsp baking powder 20 mL
  • 1 tbsp sugar 15 mL
  • 1/2 tsp onion salt 2 mL
  • 1/2 tsp crushed oregano 2 mL
  • 1/4 tsp dry mustard 1 mL
  • 1-1/4 cups shredded cheddar cheese 300 mL
  • 1 egg well beaten
  • 1 cup milk 250 mL
  • 1 tbsp butter melted, 15 mL

Instructions
 

  • Stir together in a bowl the flour, baking powder, sugar, onion salt, oregano, dry mustard and cheese.
  • Combine egg, milk and butter; add all at once to dry ingredients, stirring just until moistened.
  • Spread batter in a greased loaf pan.
  • Bake in a preheated 350ºF oven 45 minutes.
  • Cool 10 minutes on wire rack.
  • Remove from pan, slice to serve.

  • 1/4 cup oil
  • 1 cup flour
  • 1/2 cup milk
  • 1 tsp baking powder

  • Beat eggs and sugar together.
  • Add sifted dry ingredients.
  • Beat well; add oil and milk.
  • Beat until batter is smooth.
  • Drop on a hot griddle or frying pan.

No Knead Cinnamon Buns

Ingredients
  

Combine, then scald and let cool

  • 1 cup milk
  • 3 tbsp shortening
  • 3 tbsp sugar
  • 1 1/2 tsp. salt

Combine and set aside for 10 minutes

  • 1 cup warm water
  • 1 tsp sugar
  • 1 pkg yeast

Instructions
 

  • To cooled first mixture add ½ cup cold water.
  • Blend in 1 egg, add yeast mixture. Then stir in 4-5 cups flour, enough for a soft dough.
  • Let rise 15 minutes.
  • Roll out on a well-floured board.
  • Spread with ½ cup sugar and 2 tsp cinnamon mixed.
  • Roll up and cut in 1 inch slices and place about 2 inches apart in a greased pan.
  • Let rise 1 hour.
  • Just before you put them in the oven brush cream over the buns and bake in a hot oven for 20 minutes.

  • 3/4 tsp salt
  • 1 egg
  • 4 1/2 tsp baking powder

Instructions
 

  • Mix all ingredients in order given, except egg, which is added to the milk.
  • Knead 3 minutes.
  • Cut with round cookie cutter and bake at 450ºF for 12 minutes.

Italian Herb Bread

Italian Herb Bread

Ingredients
  

  • 2 pkg of dry active yeast
  • 2 cups warm water
  • 2 tbs white sugar
  • 1/4 cup olive oil
  • 1 tbs salt
  • 1 tbs dried basil
  • 1 tbs dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup grated Romano or Parmesan cheese
  • 6 cups flour

Instructions
 

  • Mix yeast, warm water and sugar together in a large bowl. Set aside for 5 mins or until foamy.
  • Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups of flour into the yeast mixture. Gradually mix in the next 3 cups of flour. Dough will be stiff
  • Knead dough for 5 to 10 mins, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until doubled in size.
  • Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about 30 mins.
  • Bake at 350°F for 35 mins. Remove loaves from the pans and let cool on a wire rack for at least 15 mins before slicing.
