Festive Coconut Macaroons

Ingredients
  

  • 4 egg whites
  • 2/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1/8 tsp salt
  • 1/2 tsp almond extract
  • 4 cups coconut
  • 1/4 cup chopped red candied cherries
  • 1/4 cup chopped green candied cherries

Instructions
 

  • Heat oven to 325ºF.
  • Grease and lightly flour cookie sheets.
  • In large bowl, beat egg whites unto foamy.
  • Add sugar, flour salt and almond extract; blend well.
  • Stir in coconut and candied cherries.
  • Drop dough by scant tablespoonfuls 2 inches apart onto greased and floured cookie sheets.
  • Bake 13 to 17 minutes or until set and lightly browned.
  • Immediately remove from cookie sheets.

Favourite Doughnuts

Ingredients
  

  • 3 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp shortening
  • 2 eggs
  • 3/4 cup milk

Instructions
 

  • Heat fat or oil to 375°F in deep fat fryer.
  • Measure 1½ cups flour and the remaining ingredients into large mixer bowl.
  • Blend ½ minute on low speed, scraping bowl constantly.
  • Beat 2 minutes on medium speed, scraping bowl occasionally.
  • Stir in remaining flour.
  • Turn dough onto well-floured cloth-covered board; roll around lightly to coat with flour.
  • Roll dough gently 1/2 inch thick.
  • Cut with floured doughnut cutter.
  • With wide spatula, slide doughnuts into hot fat.
  • Turn doughnuts as they rise to surface.
  • Fry 2 to 3 minutes or until golden brown on both sides.
  • Carefully remove from fat; do not prick the surface.
  • Drain.
  • Serve plain, sugared or frosted.

Easy Chocolate Lover’s Cheesepie

Ingredients
  

  • 3 oz packages cream cheese softened, 8each
  • 3/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups Semi-sweet mini chips divided, 12-oz pkg
  • 1 graham-cracker crumb crust
  • 2 tbsp whipping cream

Instructions
 

  • Heat oven to 450ºF.
  • Beat cream cheese and sugar with electric mixer in large bowl until well blended.
  • Add eggs and vanilla; beat well.
  • Stir in 1 2/3 cups small chocolate chips; pour into crust.
  • Bake 10 minutes.
  • Without opening oven door, reduce temperature to 250ºF; continuing baking 30 minutes or just until set.
  • Remove from oven to wire rack. Cool completely.
  • Cover; refrigerate until thoroughly chilled.
  • Place remaining 1/3 cup chips and whipping cream in small microwave-safe bowl.
  • Microwave at HIGH 20 to 30 seconds or just until chips are melted and mixture is smooth when stirred.
  • Cool slightly; spread over top of cheesepie.
  • Refrigerate 15 minutes or until topping is set.

Ingredients
  

  • 1 cup mashed bananas 2 or 3 medium
  • 1 cup miracle whip dressing
  • 3/4 cup white sugar
  • 2 cups flour (2/3 whole-wheat, 1-1/3 all-purpose)
  • 2 tsp baking soda
  • 1/2 tsp salt

Instructions
 

  • In medium large bowl beat bananas.
  • Beat in sugar and salad dressing.
  • Stir in flour, soda and salt just until moistened.
  • Fill muffin cups and bake at 350ºF for 20-25 minutes

Eagle Brand Rice Pudding

Ingredients
  

  • 2 1/2 cups water
  • 1/2 cup uncooked long grain rice
  • 1 tsp cinnamon stick or 1/4ground cinnamon
  • 2 piece lemon rind 1/2”
  • dash salt
  • 1 can Eagle Brand Sweetened Condensed Milk 14-oz, NOT EVAPORATED MILK
  • Additional ground cinnamon

Instructions
 

  • In medium saucepan, combine water, rice, cinnamon, lemon rind and salt; let mixture stand 30 minutes.
  • Bring mixture to a boil, stirring occasionally. Add Eagle Brand; mix well. Return to a boil; stir.
  • Reduce heat to medium. Cook uncovered stirring frequently, 20-25 minutes or until liquid is absorbed to top of rice.
  • Cool (pudding thickens as it cools). Remove cinnamon stick and lemon rind. Sprinkle with additional cinnamon. Serve warm or chilled

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter softened
  • 3/4 cup sugar
  • 1 egg
  • 2 tbsp grated lemon peel divided
  • 1 tsp vanilla
  • 1 cup powdered sugar
  • 4 tsps to 5lemon juice Additional sugar

Instructions
 

  • Preheat oven to 375ºF.
  • Combine flour, baking powder and salt in small bowl; set aside.
  • Beat butter and sugar at medium speed until light and fluffy.
  • Beat in egg, 1 tbsp. lemon peel and vanilla until well blended.
  • Gradually beat in flour mixture on low speed until blended.
  • Drop dough by level ¼ cupfuls onto ungreased cookie sheets, spacing 3” apart.
  • Flatten dough until 3” in diameter with bottom of glass that has been dipped in additional sugar.
  • Bake 12 to 14 minutes or until cookies are just set and edges are golden brown.
  • Cool on cookie sheets 2 minutes; transfer to wire racks.
  • Cool completely.
  • Combine powdered sugar, lemon juice and remaining 1 tbsp lemon peel in small bowl; drizzle mixture over cookies.
  • Let stand until icing is set. (Makes about 1 dozen (4-inch) cookies.

  • 1 pkg chocolate cake mix 18 1/4 -oz
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup chopped nuts
  • 1 can Eagle Brand Sweetened Condensed Milk 14-oz, NOT EVAPORATED
  • 1 pkg semi-sweet chocolate chips 6-oz
  • 1 tsp vanilla extract
  • Dash salt

Instructions
 

  • Preheat oven to 350ºF.
  • Grease 13x9” baking pan.
  • In large bowl, combine cake mix, oil and egg; beat on medium speed until
  • crumbly.
  • Stir in nuts.
  • Reserve 1 ½ cups crumb mixture.
  • Press remaining crumb mixture on bottom of prepared plan.
  • In small saucepan over medium heat, combine remaining ingredients.
  • Cook and stir until chips melt.
  • Pour chocolate mixture evenly over prepared crust.
  • Sprinkle reserved crumb mixture evenly over top.
  • Bake 25-30 minutes or until set.
  • Cool. Cut into bars.

  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 Hershey’s cocoa
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup buttermilk or sour milk
  • 1 cup strong black coffee
  • 1/2 cup vegetable oil
  • 1 tsp vanilla

Instructions
 

  • Combine first six ingredients in a large mixing bowl.
  • Add remaining ingredients and beat at medium speed for 2 minutes. Batter will be thin.
  • Pour into a greased and floured 13x9x2” pan.
  • Bake at 350ºF for 35-40 minutes.

Creamy Lemon Squares

Ingredients
  

  • 1 cup graham crumbs
  • 1/2 cup flour
  • 1/4 cup firmly packed brown sugar
  • 1/4 cum non-hydrogenated margarine
  • 1 pkg Philadelphia Cream Cheese softened, 250 g
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tbsp flour
  • 3 tbsp grated lemon peel
  • 1/4 cup fresh lemon juice
  • 1/4 tsp Baking powder
  • 2 tsp Icing sugar

Instructions
 

  • Preheat oven to 350°F.
  • Line 8-inch square baking pan with foil, with ends of foil extending over sides of pan; set aside.
  • Combine crumbs, ½ cup flour and the brown sugar in medium bowl.
  • Cut in margarine with pastry blender or two knives until mixture resembles coarse crumbs; press firmly onto bottom of prepared pan.
  • Bake 15 minutes.
  • Meanwhile, beat cream cheese spread and granulated sugar with electric mixer on medium speed until well blended.
  • Add eggs and 2 tbsp flour; mix well.
  • Blend in 1 tbsp of the lemon peel, lemon juice and baking powder; pour over crust.
  • Bake 25 to 28 minutes or until centre is set.
  • Cool completely.
  • Cover and refrigerate at least 2 hours or overnight.
  • Sprinkle with icing sugar and garnish with remaining grated lemon peel, if desired, just before cutting into square to serve.
  • Store leftover squares in refrigerator.

Cream Cheese Sugar Cookies

Ingredients
  

  • 1 cup sugar
  • 1 cup butter softened
  • 1 pkg cream cheese softened, 3-oz
  • 1/2 tsp salt
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla
  • 1 egg yolk
  • 2 cups all-purpose flour
  • Coloured sugar or decorating icing if desired

Instructions
 

  • In large bowl combine all ingredients except flour and coloured sugar; beat until light and fluffy.
  • Lightly spoon flour into measuring cup; level off.
  • Add flour; mix well.
  • Shape dough into 3 disks.
  • Wrap dough in plastic wrap; refrigerate 1 hour for easier handling.
  • Heat oven to 375ºF.
  • On floured surface roll out 1 disk of dough at a time to 1/4” thickness.
  • Cut with lightly floured cookie cutters.
  • Place 1” apart on ungreased cookie sheets.
  • Bake at 375ºF for 6 to 10 minutes or until light golden brown.
  • Frost and decorate as desired.
