Ingredients
  

  • 3/4 cup shortening
  • 1 1/4 cups packed brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup pumpkin
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp each: nutmeg allspice, cloves
  • 1/2 tsp salt
  • 1 cup raisins
  • 1 cup chopped dates
  • 1/2 cup chopped nuts

Instructions
 

  • Cream shortening and sugar.
  • Beat in eggs and vanilla.
  • Beat in pumpkin.
  • Combine dry ingredients and stir in.
  • Drop by spoonful.
  • Bake at 375ºF for 10-12 minutes.

Gum Drop Cake

Ingredients
  

  • 2 eggs
  • 1/2 cup butter
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 lb seedless raisins
  • 1 cup nuts
  • 1 cup white sugar
  • 2 cups flour
  • 1 cup milk
  • 1 tsp allspice
  • 1 lb gum drops
  • 1 jar maraschino cherries halved

Instructions
 

  • Cream eggs, butter, sugar.
  • Add 1 cup flour, cream again; add ½ cup milk, 1 cup flour with baking powder and spices.
  • Add remaining milk.
  • Add raisins, nuts and gum drops (floured). mix again.
  • Bake at 350ºF for 1 hour.

Green Tomato Cake

Green Tomato Cake

Ingredients
  

  • 2 1/4 cups sugar
  • 1 cup vegetable oil or melted shortening
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup pecans or walnuts
  • 1 cup raisins
  • 2 1/2 cups diced green tomatoes
  • coconut optional

Instructions
 

  • Preheat oven to 350°F.
  • In mixing bowl, beat sugar, vegetable oil or shortening, eggs and vanilla until smooth and creamy.
  • Sift together the flour, salt, baking powder, cinnamon and nutmeg; slowly beat into egg mixture.
  • Blend well.
  • Stir in pecans, raisins and tomatoes.
  • Pour into greased 9x13-inch pan.
  • Top with coconut if desired.
  • Bake for one hour, or until wooden pick or cake tester inserted in center comes out clean.

Fudge Truffle Cheesecake

Ingredients
  

  • 2 cups Semi-Sweet Chocolate Chips
  • 3 oz packages cream cheese softened, 8each
  • 1 can sweetened condensed milk 14 oz, NOT evaporated milk
  • 4 eggs
  • 2 tsp vanilla extract

Instructions
 

Chocolate Crumb Crust

  • Stir together 1 ½ cups vanilla wafer crumbs, ½ cup powdered sugar, 1/3 cup Cocoa and 1/3 cup melted butter or margarine in bowl.
  • Press firmly onto bottom of 9” springform pan.

Filling

  • Melt chocolate chips.
  • Beat cream cheese in large bowl until fluffy.
  • Gradually beat in sweetened condensed milk until smooth.
  • Add melted chips, eggs and vanilla; mix well.
  • Pour into prepared crust.
  • Bake 1 hour and 5 minutes or until center is set.
  • Remove from oven to wire rack.
  • With knife, loosen cake from side of pan.
  • Cool completely; remove side of pan.
  • Refrigerate several hours before serving.

Fruitcake Slices

Ingredients
  

  • 1 cup butter or margarine softened
  • 1 cup powdered sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/3 cups coarsely chopped candied fruit fruitcake mix
  • 2 1/2 cups all-purpose unsifted flour divided
  • 3/4 cup to 1flaked coconut

Instructions
 

  • Beat butter in a large bowl with electric mixer at medium speed until smooth.
  • Add powdered sugar; beat until well blended.
  • Add egg and vanilla; beat until well blended.
  • Combine candied fruit and walnuts in medium bowl.
  • Stir ¼ cup flour into fruit mixture.
  • Add remaining 2 ¼ cups flour to butter mixture; beat at low speed until blended.
  • Stir in fruit mixture with spoon.
  • Shape dough into 2 logs, each about 2” in diameter and 5 ½” long.
  • Spread coconut evenly on sheet of waxed paper.
  • Roll logs in coconut, coating evenly.
  • Wrap each log in plastic wrap.
  • Refrigerate 2-3 hours or overnight, or freeze up to 1 month. (Let frozen logs stand at room temperature about 10 minutes before slicing and baking).
  • Preheat oven to 350ºF.
  • Grease cookie sheets.
  • Cut logs into ¼” thick slices; place 1” apart on cookie sheets.
  • Bake 13-15 minutes or until edges are golden brown.
  • Transfer to wire racks to cool

Fruit Crumble

Ingredients
  

  • 4 cups sliced apples or any other fruit
  • 3 tbsp sugar
  • 1/4 cup shortening or butter
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour sifted
  • 3/4 cup quick cooking oats

Instructions
 

  • Place fruit in greased casserole, sprinkle with the sugar.
  • Cream fat and sugar well.
  • Add flour and rolled oats, rub in as for pastry, until have crumbs.
  • Sprinkle on top of fruit,
  • Bake in moderately hot oven 375ºF, for 30-40 minutes until fruit is done and the crust is a golden brown.

Foolproof Dark Chocolate Fudge

Ingredients
  

  • 3 cups Semi-sweet chocolate chips (1 1/2 pkgs, 12-oz each)
  • 1 can sweetened condensed milk 14 oz, NOT EVAPORATED
  • Dash salt
  • 1 cup chopped walnuts
  • 1 1/2 tsp vanilla extract

Instructions
 

  • Line 8 or 9” square pan with foil or waxed paper, extending foil over edges of pan.
  • Melt chocolate chips in top of double boiler.
  • When chips are completely melted and smooth remove from heat and add sweetened condensed milk and salt.
  • Stir in walnuts and vanilla.
  • Spread evenly into prepared pan.

Notes

To make white chocolate fudge melt the chips and condensed milk TOGETHER. Then add pistachio nuts and dried cranberries. Can also substitute almond extract for the vanilla.

Flaky Pie Crust

Ingredients
  

  • 4-5 cups sifted flour
  • 1 tsp salt
  • 1 pound Tenderflake lard
  • 1 egg
  • 1 tbsp vinegar
  • cold water

Instructions
 

  • Combine flour (start with 4 cups – the rest can be used to roll), salt.
  • Cut in lard (should look like large curd cottage cheese).
  • Beat together egg, vinegar and enough cold water to fill one cup.
  • Add all at once to flour mixture. The mixture will be wet.
  • Roll into a log – can be rolled immediately or chilled before rolling.
