Marshmallow Salad (Aunt Bonnie’s)

Ingredients
  

  • 1 pkg miniature marshmallows
  • 1 box of lemon jello
  • 2 envelopes of dream whip
  • 1 16 oz can of crushed pineapple

Instructions
 

  • Make jello and let stand until jello is partially thickened.
  • Drain pineapple, mix dream whip according to directions on envelope.
  • Mix all ingredients together and let thicken in fridge.
  • Top with nuts and cherries.

Magic Lemon Squares

Ingredients
  

  • 1 cup quick oats uncooked
  • 1 cup flour
  • 1/2 cup flaked coconut
  • 1/2 cup coarsely chopped walnuts
  • 1/2 cup firmly-packed light brown sugar
  • 1 tsp baking powder
  • 1/2 cup butter or margarine melted
  • 1 can Eagle Brand sweetened condensed milk
  • 1/2 cup lemon juice

Instructions
 

  • Preheat oven to 350ºF (315ºF if using glass dish).
  • In medium bowl, combine oats, flour, coconut, nuts, sugar, baking powder
  • and butter; stir to form a crumbly mixture. Set aside.
  • In medium bowl, combine sweetened condensed milk and lemon juice.
  • Pat ½ the crumb mixture in pan.
  • Spread lemon mixture over top and then sprinkle with remaining crumbs.
  • Bake 25-30 minutes or until lightly browned.
  • Cool thoroughly before cutting

Ingredients
  

  • 1/4 cup margarine or butter
  • 1 pkg regular marshmallows (about 40) can also use equals 125 (5 cups) mini marshmellows
  • 1/2 tsp vanilla extract optional
  • 6 cups Kellogg’s Rice Krispies cereal

Instructions
 

  • In large saucepan over low heat, melt margarine.
  • Add marshmallows; stir until melted and well blended.
  • Remove from heat.
  • Stir in vanilla.
  • Add cereal, stirring until coated.
  • Using lightly-buttered spatula, press into buttered 13x9” pan.
  • Cool.
  • Cut into squares (24-2” squares)

Notes

For chewier squares, use 5 cups cereal. 80 calories/serving.

  • 1 chocolate cake mix
  • 1/2 cup brandy
  • 1 can cherry pie filling

Instructions
 

  • Mix cake.
  • Add brandy to cherry pie filling.
  • Place half of cake mix in 9x12” pan and put cherry pie filling over cake mix.
  • Add remaining cake mix.
  • Bake.
  • Ice with whipped cream 3 hours before serving.

Larry's Favorite Cookies

Servings 42 large cookies

Ingredients
  

  • 1 cup rolled oats
  • 1/3 cup butter
  • 1 cup boiling water
  • 3/4 cup cornmeal
  • 1 tbs sugar
  • 2 tsp chicken or beef stock
  • 1/2 cup milk
  • 1 cup shredded cheese
  • 1 egg beaten
  • 2 cups white or wheat flour

Instructions
 

  • Preheat oven to 325°F.
  • Grease cookies sheets.
  • In large bowl combine rolled oats, butter and water; let stand for 10mins. Stir in cornmeal, sugar, boullion, milk, cheese and egg. Mix well.
  • Add flour 1 cup at a time, mixing well after each addition to form a stiff dough.
  • On floured surface, knead in remaining flour until dough is smooth and no longer sticky, 3 to 4 mins.
  • Roll or pat out dough to 1/2 thickness; cut with a cookies cutter.
  • Place 1 inch apart.
  • Bake for 35 to 45 mins or until golden brown.
  • Cool completely.

Ingredients
  

  • 12 slices bacon crisply cooked and crumbled
  • 1 cup shredded natural Swiss cheese 4 oz
  • 3 medium green onions chopped
  • 1/2 cup Bisquick
  • 1 cup milk
  • 1/8 tsp pepper
  • 2 eggs

Instructions
 

  • Heat oven to 400ºF.
  • Grease pie plate.
  • Sprinkle bacon, cheese and onion in pie plate.
  • Stir remaining ingredients until blended.
  • Pour into pie plate.
  • Bake 35-40 minutes or until knife inserted in center comes out clean.
  • Let stand 5 minutes before serving.

Ingredients
  

  • 1/3 cup raisins or more
  • 1 cup cornmeal
  • 1 1/2 cups buttermilk
  • 1 1/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup honey

Instructions
 

  • Pour boiling water over raisins.
  • Combine cornmeal with 1 cup buttermilk.
  • Into large bowl, sift dry ingredients.
  • In medium bowl, beat egg, oil, money and remaining buttermilk.
  • Add liquid mixture to cornmeal and buttermilk.
  • Stir liquid mixture into dry. Add drained raisins.
  • Fill muffin cups and bake.
  • 400°F - 20 minutes

Ingredients
  

  • 1/2 cups chocolate wafer crumbs
  • 6 tbsp butter melted
  • 3 pkgs Philadelphia Brand Cream Cheese softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 8 squares Baker’s Semi-sweet chocolate melted

Glaze:

  • 1/2 cup whipping cream
  • 4 squares semi-sweet chocolate chopped

Instructions
 

  • Heat oven to 325ºF.
  • Mix crumbs and butter; press onto bottom of a 9” springform pan.
  • Bake 10 minutes at 325ºF.
  • With an electric mixer, beat cream cheese, sugar and vanilla until smooth.
  • Beat in eggs, one at a time, just until blended.
  • Stir in chocolate; pour over crust.
  • Bake 50 minutes or until set.
  • Run knife around rim of pan to loosen cake.
  • Cool – refrigerate overnight.

Glaze

  • Bring cream to a boil over low heat; remove from heat.
  • Stir in chocolate until melted and smooth.
  • Spread over top and sides of cake.
  • Decorate as desired.

Holiday Chocolate Shortbread Cookies

Ingredients
  

  • 1 cup butter softened, 2 sticks
  • 1 1/4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup Dutch processed Cocoa or Hershey’s Cocoa
  • 1 3/4 cups all-purpose flour

Instructions
 

  • Heat oven to 300ºF.
  • Beat butter, powdered sugar and vanilla in large bowl until creamy.
  • Add cocoa; beat until well blended.
  • Gradually add flour, stirring until smooth.
  • Roll or pat dough to ¼” thickness on lightly floured surface or between 2 pieces of wad paper.
  • Cut into shapes.
  • Place on ungreased cookie sheet and bake 15 to 20 minutes or just until firm.
  • Decorate with white chocolate chips (apply while cookies are still warm so they will adhere).
