Easy Chicken Casserole

Ingredients
  

  • 1 chicken cut up
  • 1 cup uncooked rice
  • 1 can mushroom soup
  • 1-1/2 cups water
  • 1 envelope onion soup mix

Instructions
 

  • Sprinkle rice in bottom of casserole.
  • Combine mushroom soup and water and pour over rice.
  • Place chicken pieces on top of mixture and sprinkle onion soup mix over.
  • Add salt and pepper to taste.
  • Cover and bake at 350ºF for 2 hours

Ingredients
  

  • 1 lb ground Beef
  • 1 medium onion finely chopped
  • 1 cup celery
  • 1 can of cream of mushroom soup
  • cup ¾water
  • 3 tbs soya sauce
  • cup ½uncooked rice
  • 1 tbs brown sugar
  • 1 can bean sprouts

Instructions
 

  • Combine the first three ingredients together and cook until browned.
  • Add the rest of the ingredients and place into a 2 qt casserole dish.
  • Top with chow mein noodles and bake uncovered for 1 hour at 350°F

Casserole for a Crowd

Servings 2 casseroles

Ingredients
  

  • 2 cups raw elbow macaroni
  • 2 lbs hamburger
  • 1 large onion chopped
  • 1-10 oz can tomato soup
  • 1-10 oz can cream of chicken soup
  • 1-10 oz can cheddar cheese soup
  • 1-10 oz can water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup margarine melted
  • 1 cup fine soft breadcrumbs
  • Paprika or seasoned alt
  • Parsley flakes

Instructions
 

  • Cook macaroni.
  • Brown hamburger and onion.
  • Add soups, water, seasonings and macaroni.
  • Blend and cover with bread crumbs mixed with margarine.
  • Top with parsley flakes.
  • Bake at 350ºF ½-1 hour.
  • Makes 2 good sized casseroles or one big one.

Ingredients
  

  • 3 cups coarsely shredded cabbage
  • 1 lb. hamburger
  • 1 onion sliced

Mix together:

  • 1 can tomato soup
  • 1 can water
  • 6 tbsp. long grain rice
  • 1 tsp. salt

Instructions
 

  • Grease casserole dish.
  • Cook meat until red is gone but don’t brown.
  • Layer in casserole
  • Pour soup mixture over cabbage and meat.
  • Bake 1 ½ hours at 315ºF.

  • 1 lb ground beef
  • 1-1/2 cups green peppers
  • 1 large onion finely chopped
  • 1 can tomato soup
  • 1 small can tomato sauce
  • 1 14 oz can creamed corn
  • 2 tsp chilli powder
  • 1 tsp dry mustard
  • 1/2 pkg pasta cooked
  • grated cheese to taste

Instructions
 

  • Brown the beef then add both the onion and the green peppers and cook until soft.
  • Add the liquids to the ground beef mixture then add the noodles.
  • Place into a casserole dish and grate cheese over the top.
  • Bake for 45mins at 350°F

Ingredients
  

  • 1/2 cup chopped onion
  • 2 tbsp. butter or margarine
  • 1 can mushroom soup
  • 1/2 cup milk
  • 1/2 cup tomatoes
  • 2 cups cooked noodles
  • 1 cup peas
  • 2 slices cheese
  • 1 tin tuna

Instructions
 

  • In saucepan cook onions in butter until tender.
  • Pour onions and remaining ingredients, except cheese slices into baking dish.
  • Top with cheese slices and bake at 400ºF for 20 minutes, or until hot.

Fish Risotto

Ingredients
  

  • 2 oz butter
  • 1 large onion
  • 1/2 green pepper
  • 1/2 red pepper
  • 2 tbsp tomato puree
  • 1 garlic clove
  • 1 tsp dried mixed herbs
  • 2 oz mushrooms
  • 12 oz long grain rice
  • 1 1/2 pints hot chicken stock
  • salt
  • 1 1/2 lbs fish fillets

Instructions
 

  • Place butter, onion, peppers, tomato puree, garlic, herbs and mushrooms in a large microwavable casserole dish.
  • Cover and cook for 10 minutes stirring halfway.
  • Stir in the rice, stock and salt.
  • Cover & cook for 13 minutes.
  • Place fillets in a shallow microwaveable dish.
  • Cover and cook for 7 minutes re-arranging halfway through.
  • Flake the fish & stir into rice mixture.
  • Heat through.

Scalloped Potatoes & Pork Chops

Servings 6 servings

Ingredients
  

  • 6 pork chops - ½” thick
  • 1 tbsp cooking oil
  • 5 cups pared potatoes
  • 6 slices process American cheese 1 ox.
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup chopped green onions
  • 1 can condensed cream of mushroom soup 10 ½ oz., or cream of celery

Instructions
 

  • Brown pork chops on one side in hot oil in skillet.
  • Remove chops as they brown; reserve drippings.
  • Place half of potatoes in greased 13x9” baking pan, top with cheese slices and then remaining potatoes.
  • Place pork chops, brown side up, on potatoes. Sprinkle with salt and pepper.
  • Cook onion in pan drippings in skillet until tender.
  • Add soup and milk, heat, pour over chops.
  • Cover with foil.
  • Bake @350 for 1 hour and remove cover and bake 30 minutes or until meat and vegetables are tender.

  • 5-6 lb pork roast
  • 1 cup strong black coffee
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried thyme crushed
  • 2 cups water
  • 1/4 cup Worcestershire sauce
  • 1 tsp garlic powder
  • 1/4 tsp ground cloves

Instructions
 

  • Place pork roast in roasting pan and pour 2 cups water in bottom of pan.
  • Pour coffee and Worcestershire sauce over roast.
  • Mix salt, garlic powder, pepper, cloves, and thyme together; sprinkle over roast.
  • Cover tightly.
  • Roast in a 350ºF oven for 3 ½ hours or until done.

Pork Marsala

Pork Marsala

Ingredients
  

  • 8 fast-fry pork loan centre-cut chops 1 lb
  • 1/2 tsp each salt and pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp EVOO extra virgin olive oil
  • 1 large shallot minced, or half small onion
  • 2 cloves garlic minced
  • 6 oz button mushrooms thinly sliced
  • 1/4 tsp dried Italian herb seasoning
  • 1/2 cup sweet marsala wine
  • 1/2 cup chicken broth
  • 1 tsp butter softened

Instructions
 

  • Trim pork; sprinkle with half each of the salt and pepper. Dredge in all but 1 tsp of the flour
  • In large skillet, heat oil over medium-high heat; cook pork, in batches and turning once, until just a hint of pink remains inside and juices run clear when pork is pierced, about 5 minutes.
  • Transfer to plate.
  • Saute shallot and garlic until softened, about 2 minutes.
  • Add mushrooms, Italian seasoning and remaining salt and pepper; sauté, stirring until golden, about 5 minutes.
  • Add Marsala; cook until reduced by half.
  • Add broth and ¼ cup water; reduce heat and simmer until reduced by half, about 2 minutes.
  • Meanwhile, mash butter with remaining tsp flour; stir into sauce and cook until thickened.
  • Return pork to pan; heat through.
  • Sprinkle with parsley.
