  • 1 tbsp olive oil plus additional for drizzling
  • 1 1/2 cups breadcrumbs
  • 1/4 cup flat leaf parsley chopped, about a handful
  • 2 tbsp fresh thyme leaves chopped

  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 cup white wine or sherry
  • 1 1/2 cups milk
  • a few grates fresh nutmeg
  • 1 1/2 cups grated Parmigiano Reggiano
  • 2 cups shredded Gruyere Cheese
  • 1 pound bay scallops

  • 2 tsp lemon juice
  • 1 tsp hot pepper sauce
  • 1 pkg imitation crabmeat or lobster flaked, 8 ounces
  • 1/3 cup chopped red bell pepper

  • 64 slices cucumber about 2 ½ medium cucumbers cut 3/8” think

Ingredients
  

  • 1 large onion finely grated
  • 6 large potatoes peeled and finely grated
  • 3 eggs slightly beaten
  • 1/4 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 tbsp vegetable oil

Instructions
 

  • Combine ingredients.
  • Use ¼ cup batter for each pancake.
  • Fry in greased hot frying pan until nicely browned; turn and brown other side.

  • 2 lbs frozen hashbrowns
  • 1 cup diced onion
  • 1 can cream of chicken soup 10 oz
  • 1 carton sour cream 500 g
  • 1/2 cup margarine
  • 8 oz sharp cheese grated
  • salt and pepper to taste

Instructions
 

  • Thaw potatoes for 30 minutes.
  • Mix all ingredients and pour into 9x13” pan.
  • Top with cornflake crumbs.
  • Bake at 350ºF for one hour.

  • 1 can Cream of Mushroom Soup
  • 1/2 cup milk
  • 1 tsp soy sauce
  • Dash pepper
  • 4 cups cooked cut green beans*
  • 1 can French’s French Fried Onions 2.8 oz., 1 1/3 cups

Instructions
 

  • In 1 ½-quart casserole mix soup, milk, soy sauce, pepper, beans and ½ can onions.
  • Bake at 350ºF for 25 minutes or until hot.
  • Stir. Sprinkle remaining onions over bean mixture. Bake 5 minutes more or until onions are golden.

Notes

*Use 1 bag (16 to 20 oz) frozen green beans, 2 packages (9 oz each) frozen green beans, 2 cans (about 16 oz. each) green beans or about 1 ½ pounds fresh green beans for this recipe.

Instructions
 

  • Sauté onion in butter; add green pepper and tomatoes, cook 5 minutes.
  • Add rest of ingredients; simmer 5 minutes.
  • Place in a 2-1/2 quart casserole.
  • Top with Canadian bacon; bake in 350ºF oven for 20 minutes.

Italian Style Garlic Shrimp with Cherry Tomatoes & Thin Spaghetti

Ingredients
  

  • Coarse Salt
  • 1 pound thin spaghetti
  • 1 pound small shrimp deviened and peeled, tails removed
  • 2 teaspoons lemon zest plus the juice of ¼ lemon
  • 1/4 cup extra-virgin olive oil
  • 6 cloves garlicminced
  • 1 pint cherry tomatoes halved
  • 4 scallions thinly sliced on an angle
  • 1/4 cup white vermouth or 1/3dry white wine eyeball it
  • 2 handfuls fresh flat-leaf parsley chopped
  • 20 fresh basil leaves torn or shredded
  • Coarse black pepper

Instructions
 

  • Heat large pot of water for the pasta.
  • When the water boils, salt it and cook the pasta al dente.
  • Heat a large non-stick skillet over medium to medium-high heat.
  • Season the shrimp with the lemon zest, lemon juice, and a little salt.
  • Add the EVOO to the hot pan and then add the shrimp.
  • Cook for a minute, then add the garlic, tomatoes, and scallions and toss, cooking for another minute or two until the shrimp are firm and pink.
  • Add the white vermouth and the herbs. Turn off the heat.
  • Drain the pasta well and add to the sauce.
  • Toss and combine the sauce with pasta and season with salt and black pepper.

  • 2 tbsp butter or margarine
  • 1 can mushroom soup
  • 1/2 cup milk
  • 1/2 cup tomatoes
  • 2 cups cooked noodles
  • 1 cup peas
  • 2 slices cheese
  • 1 tin tuna

Instructions
 

  • In saucepan cook onions in butter until tender.
  • Pour onions and remaining ingredients, except cheese slices into baking dish.
  • Top with cheese slices and bake at 400ºF for 20 minutes, or until hot.

  • 1/4 cup chopped onion
  • 2 tbsp chopped green pepper
  • 2 tbsp butter or margarine

  • 2 cups cooked fish or seafood
  • 1 tsp lemon juice
  • 2 tbsp buttered bread crumbs

Instructions
 

  • Cook celery, onion and pepper in butter until tender.
  • Add remaining ingredients.
  • Pour into a 1 qt. casserole.
  • Bake at 350ºF for 25 minutes.
  • Stir. Top with buttered bread crumbs and bake 5 minutes longer.

Meatball and Penne Casserole

Ingredients
  

  • 3/4 lb penne noodles
  • 2 lb ground beef
  • 1 cup fine fresh bread crumbs
  • 1 egg
  • 2 tbsp tsp dried thyme or 2chopped fresh
  • 1 tbsp vegetable oil
  • 1 large onion chopped
  • 1 cup chopped green onions
  • 4 cloves garlic minced
  • 1 sweet green or red pepper coarsely chopped
  • 1/2 lb mushrooms sliced
  • 2 cups sliced celery
  • 1 tsp each dried oregano and basil
  • 2 oz cans 14each tomato sauce
  • 1/2 cup chopped fresh parsley
  • 1/2 lb mozzarella cheese shredded
  • 1/4 cup freshly grated parmesan cheese

Instructions
 

  • In large pot of boiling water, cook noodles according to package directions or until al dente. Drain and rinse under cold running water; drain and set aside.
  • In bowl, combine beef, breadcrumbs, egg and thyme. Mix well and shape into 1” balls.
  • In heavy Dutch oven or flameproof casserole, heat oil over medium heat; cook meatballs, in single layer and in batches if necessary, stirring occasionally for about 10 minutes or until meat is no longer pink. Drain off excess fat.
  • Stir in onions, cook for 2 minutes. Stir in garlic, pepper, mushrooms, celery, oregano and basil; cook for 2 minutes. Add tomato sauce, parsley, noodles and half of the mozzarella cheese; stir gently to mix. Sprinkle with parmesan and remaining mozzarella. (Casserole can be prepared to this point, cooled, covered and refrigerated for up to 2 days or frozen for up to 3 months).
  • Bake, covered in 350ºF oven for 20 minutes; uncover and bake for 10-15 minutes longer or until heated through and bubbly.
