Mushroom Mozzarella Bruschetta

Ingredients
  

  • 1 can Condensed Cream of Mushroom Soup
  • 1/4 tsp garlic powder
  • 1/4 tsp dried Italian seasoning crushed
  • 1 cup shredded mozzarella cheese 4 oz.
  • 1 tbsp grated parmesan cheese
  • 1 small red pepper chopped (about ½ cup)
  • 2 green onions chopped (about ¼ cup)

Ingredients
  

  • Onion Rings
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp Salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup cooking oil

Instructions
 

  • Mix all ingredients, except onion rings together.
  • Dip onion rings in mixture and deep fry until golden.

Ingredients
  

  • 3 oz cream cheese
  • 1/8 tsp pepper
  • 2 tbsp melted butter
  • 2 cups cooked cubed chicken
  • 2 tbsp milk
  • 1/4 tsp salt
  • 1 pkg Uncooked refrigerator crescent rolls

Instructions
 

  • Blend cheese with melted butter until smooth.
  • Add chicken, salt, pepper and milk. Mix well.
  • Separate dough into 4 rectangles.
  • Seal perforations.
  • Spoon ½ cup meat mixture into centre.
  • Pull 4 corners to centre; seal edge.
  • Brush tops with melted butter.
  • Bake on ungreased cookie sheet 20-25 minutes (until golden brown) in 350ºF oven.

1 pkg. of 8 rolls makes 4 squares

Crab Canapes

Ingredients
  

  • 2/3 cup cream cheese softened
  • 2 tsp lemon juice
  • 1 tsp hot pepper sauce
  • 1 pkg imitation crabmeat or lobster flaked, 8 ounces
  • 1/3 cup chopped red bell pepper
  • 2 green onions with tops sliced (about ¼ cup)
  • 64 slices cucumber about 2 ½ medium cucumbers cut 3/8” think

Instructions
 

Prep

  • Combine cream cheese, lemon juice and hot pepper sauce in medium bowl; mix well.
  • Stir in crabmeat, red bell pepper and green onions; cover.
  • To allow flavours to blend, chill crab mixture at least 1 hour before serving.

When ready to serve

  • Spoon 1 ½ tsp crab mixture onto each cucumber slice.
  • Place on serving plate; garnish with parsley, if desired.

Notes

Also good served on melba toast rounds.

  • 1 cups cheddar cheese 8 oz.
  • 2 tsp Worchestershire Sauce
  • 1 tsp lemon juice

  • 1 tbsp tbsp. onion chopped
  • 1 tbsp tbsp. pimento chopped
  • dash cayenne
  • dash salt

  • Blend well
  • Roll in chopped walnuts or parsley

Cheddar, Almond and Bacon Coins

Cheddar, Almond and Bacon Coins

Ingredients
  

  • 1 sheet PC Butter Puff Pastry thawed but cold
  • 1/2 cup shredded White Cheddar Cheese
  • 7 slices cooked bacon coarsely chopped
  • 2 tbsp sliced almonds
  • 1/8 tsp cayenne pepper

Instructions
 

  • Preheat oven to 375ºF.
  • Unroll puff pastry onto work surface, reserving parchment paper it was packed in.
  • Sprinkle cheese evenly over puff pastry. Top with chopped bacon, then sliced almonds.
  • Starting at one edge, lightly roll the puff pastry up, jell roll-fashion.
  • Place roll on baking sheet. Freeze for 15 to 20 minutes.
  • Place reserved piece of parchment paper on large cookie sheet.
  • Using a serrated bread knife, slice pastry roll crosswise into ½-inch thick slices.
  • Place flat on prepared baking sheet, spacing well apart.
  • Brush a little egg yolk over tops of coins. Sprinkle with cayenne pepper.
  • Bake in centre of oven for 16-18 minutes or until deep gold colour.

Bacon-Stuffed Cherry Tomatoes

Ingredients
  

  • 2 lbs bacon
  • 1/2 cup green onion finely chopped
  • 1/2 cup mayonnaise
  • 24 cherry tomatoes

Instructions
 

  • Dice bacon and fry until crisp. Drain and cool on paper towels.
  • In medium bowl, mix bacon, onion and mayonnaise.
  • Remove stems from tomatoes.
  • Place tomatoes stem side down on cutting board. Cut a thin slice off the top of each tomato.
  • With a small spoon, scoop out the pulp.
  • Invert tomatoes on paper towels 30 minutes to drain.
  • Fill tomatoes with bacon mixture.
  • Refrigerate several hours or overnight.

Notes

They won’t roll on the platter if you scoop out the bottoms and stand them stem side down.
