Brunch Vegetable Ring

Ingredients
  

  • 1 jar artichokes 170 gr
  • 1 red pepper
  • 2 green onions
  • 1/4 cup oil-packed sun dried tomatoes
  • 1/4 cup black ripe olives
  • 2 oz feta cheese
  • 4 oz mozzarella cheese
  • 1 clove garlic
  • 2 pgks crescent rolls
  • 1 egg

Instructions
 

  • Arrange crescent rolls around circular stone or pizza pan overlapping the corners and having the narrow ends hanging over the edge.
  • Mix all other ingredients (except egg) and pile around ring.
  • Bring narrow end over the filling and into centre (making a pretty pattern).
  • Brush with well-beaten egg and bake in 375ºF over until golden brown

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole-wheat flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 2/3 cup milk
  • 1 egg
  • 1/3 cup vegetable oil
  • 3/4 cup brown sugar
  • 2 medium red apples (cored unpeeled)
  • 1/4 cup nuts

Instructions
 

  • Sift flour, baking powder, soda, salt and cinnamon into a large bowl.
  • Into electric blended put milk, egg, oil, sugar, nuts and apple (cut in eights).
  • Blend well.
  • Pour into flour mixture.
  • Stir only until mixed.
  • Fill muffin cups and bake.
  • Before baking sprinkle batter in muffin cups with sugar and cinnamon

Ingredients
  

  • 1/2 cup butter
  • 1/2 cup white sugar
  • 3 tbsp cocoa or 1 square chocolate
  • 1 egg well beaten
  • 2 cups graham wafer crumbs
  • 1 cup coconut
  • 1 tsp vanilla
  • 1/4 cup butter
  • 2 tsp instant vanilla pudding
  • 3 tbsp hot water

Instructions
 

  • Melt butter, sugar and cocoa.
  • Add well-beaten egg, graham wafer crumbs, coconut and vanilla.
  • Press mixture into square pan and cool for 10 minutes.
  • Mix remaining ingredients and make a smooth paste. Spread over mixture.
  • Melt 2 squares semi-sweet chocolate and 2 tbsp. butter. Spread over top.
  • Refrigerate and serve.

Ingredients
  

  • 3/4 cup butter softened or shortening
  • 1 cup granulated sugar
  • 2 tsp ground ginger
  • 1 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 egg
  • 1/4 cup molasses
  • 21/4 cups flour
  • 1/2 cup raisins optional
  • 1/4 cup course or granulated sugar

Instructions
 

  • Preheat over to 350°F.
  • In a large mixing bowl beat butter,1 cup of sugar,ginger,baking soda,cinnamon and cloves together scraping the sides of the bowl occasionally.
  • Beat in the egg and molasses until combined.
  • Mix in flour and raisins(if desired).
  • Shape dough into 1 1/2 inch balls.
  • Roll balls into the remaining 1/4 cup of sugar and place 2 1/2 inches apart on a ungreased cookie sheet.
  • Bake 10 minutes

Notes

about I bake mine for 11 minutes and they turn out perfect. DO NOT OVERBAKE!!!

Best Lemon Meringue Pie

Ingredients
  

Lemon Curd

  • 2 cups water
  • 1/2 cup cornstarch plus 2 tbsp
  • 10 egg yolks
  • 1 cup lemon juice
  • 1 1/3 cup sugar
  • 1/8 tsp salt
  • grated zest of 4 lemons

Meringue

  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/2 cup sugar
  • 1/2 tsp lemon juice

Instructions
 

Lemon Curd

  • In small bowl, whisk the cornstarch with 1 cup of water until dissolved. Set aside.
  • In small saucepan add egg yolks, lemon juice, sugar and the remaining 1 cup of water.
  • Cook over medium low heat for one minute, stirring constantly. The mixture should not boil but the sugar should dissolve.
  • When the sugar has dissolved pour in the cornstarch mixture and turn up the heat to medium.
  • Cook mixture, stirring continuously so that the mixture does not stick.
  • Cook for 6-8 minutes until it has started to boil, thickens and becomes translucent.
  • Set filling aside to cool slightly.
  • Immediately make meringue so filling stays warm.

Meringue

  • Whip egg whites on high speed.
  • Immediately add cream of tartar and whip until soft peaks form.
  • While whipping, add the sugar one tablespoon at a time to allow it to dissolve.
  • Add the lemon juice at the end when the meringue is shiny and holds
  • medium stiff peaks.
  • Pour the warm filling into the cooled pie shell and spread the meringue on top, making sure to reach the edges of the pastry.
  • Use your spatula to swirl the meringue into peaks.
  • Cook the pie at 375ºF for about 6 minutes until meringue is just golden.

Ingredients
  

  • 1 3/4 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 3/4 cup canned pumpkin
  • 1/2 cup milk

Cinnamon Sugar Coating

  • 1/4 unsalted butter melted
  • 1/3 cup sugar
  • 1/2-1 tbsp cinnamon

Instructions
 

  • Preheat oven to 350°F. Butter a donut pan and set aside.
  • In a medium bowl, mix flour, baking powder, salt, and spices together, and set aside.
  • In a large bowl, or the bowl of an electric mixer, fitted with the paddle attachment, whisk oil, brown sugar, egg, vanilla, pumpkin ad milk until combined - DO NOT OVERMIX BATTER.
  • Using a pastry bag, fill each donut cup with the batter. They should be fairly full but not overflowing.
  • Bake for 11-13 minutes, until donuts spring back when gentle pressed.
  • Turn donuts onto a wire rack and allow to cool for a few minutes.
  • While the donuts are cooling, melt the butter in one bowl, and combine the sugar and cinnamon in another.
  • While donuts are warm, brush each donut with butter and roll in cinnamon sugar mixture.
  • Serve immediately!

Ingredients
  

  • 1/4 cup butter
  • 3/4 cup brown sugar
  • 3-5 apples or peaches

Batter

  • 1/4 cup shortening
  • 1/3 cup white sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 cup sifted all-purpose flour
  • 1/3 cup boiling water
  • 1 tsp baking powder
  • 1/2 tsp soda
  • 1/8 tsp salt
  • 1 tsp ginger
  • 1/2 tsp cinnamon

Instructions
 

  • Melt the ¼ cup butter in baking dish; Add the brown sugar and cook together.
  • Pare and core apples or peaches, Cut in wedges and arrange in butter and sugar.
  • Cream shortening and sugar and add well-beaten egg and molasses.
  • Beat thoroughly.
  • Mix and sift dry ingredients and add to mixture.
  • Lastly, add boiling water, mixing quickly.
  • Pour over apples in dish and bake in 325ºF oven for 40 minutes.
  • Turn onto plate while warm.

  • 2 granny smith apples
  • 1 pint strawberries
  • 2 kiwi
  • 1 small orange mandarin
  • brown sugar
  • cinnamon
  • 1 pkg tortillas

Instructions
 

  • Cut tortillas into 8 and bake on stone or pizza pan at 375ºF until crispy.
  • Chop all fruit and add brown sugar and cinnamon to taste.
  • Serve with crispy tortillas chips.
