Zucchini Chocolate Cake

Ingredients
  

  • 2 1/2 cups flour
  • 1/2 cup cocoa
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 3/4 cup oil
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 tsp vanilla
  • 2 cups grated zucchini (peeled or unpeeled take out seeds)
  • 1/2 cup milk
  • 3 eggs
  • 1 cup chopped nuts optional
  • 3 tsp orange peel optional – I don’t use

Instructions
 

  • Blend dry ingredients.
  • Grease Bundt cake pan.
  • Beat oil, sugar and eggs.
  • Add vanilla and zucchini.
  • Add dry ingredients alternately with milk.
  • Bake at 350ºF for one hour.
