Brunch Vegetable Ring

Ingredients
  

  • 1 jar artichokes 170 gr
  • 1 red pepper
  • 2 green onions
  • 1/4 cup oil-packed sun dried tomatoes
  • 1/4 cup black ripe olives
  • 2 oz feta cheese
  • 4 oz mozzarella cheese
  • 1 clove garlic
  • 2 pgks crescent rolls
  • 1 egg

Instructions
 

  • Arrange crescent rolls around circular stone or pizza pan overlapping the corners and having the narrow ends hanging over the edge.
  • Mix all other ingredients (except egg) and pile around ring.
  • Bring narrow end over the filling and into centre (making a pretty pattern).
  • Brush with well-beaten egg and bake in 375ºF over until golden brown

Apple Salsa

Apple Salsa

Ingredients
  

  • 2 granny smith apples
  • 1 pint strawberries
  • 2 kiwi
  • 1 small orange mandarin
  • brown sugar
  • cinnamon
  • 1 pkg tortillas

Instructions
 

  • Cut tortillas into 8 and bake on stone or pizza pan at 375ºF until crispy.
  • Chop all fruit and add brown sugar and cinnamon to taste.
  • Serve with crispy tortillas chips.

Rice Pudding

Rice Pudding

Ingredients
  

  • 1 qt milk
  • 1/2 cup sugar
  • 1/2 cup rice
  • 3 eggs
  • 1 tbsp sugar
  • nutmeg for colour

Instructions
 

  • Combine milk, sugar and rice in a saucepan. Bring to a boil.
  • Reduce heat and simmer for an hour or until rice is mushy. Stir frequently to prevent sticking or burning.
  • In a bowl beat eggs and 1 tbsp sugar until thick.
  • Add milk and rice mixture a spoonful at a time until eggs are thick.
  • Pour into serving bowl.
  • Add nutmeg for colour on top.
  • Cool before serving.
