Ingredients
  

  • 1 tbsp olive oil plus additional for drizzling
  • 1 1/2 cups breadcrumbs
  • 1/4 cup flat leaf parsley chopped, about a handful
  • 2 tbsp fresh thyme leaves chopped
  • Salt and ground black pepper
  • 1 pound macaroni or small shells
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 cup white wine or sherry
  • 1 1/2 cups milk
  • a few grates fresh nutmeg
  • 1 1/2 cups grated Parmigiano Reggiano
  • 2 cups shredded Gruyere Cheese
  • 1 pound bay scallops

Italian Style Garlic Shrimp with Cherry Tomatoes & Thin Spaghetti

Ingredients
  

  • Coarse Salt
  • 1 pound thin spaghetti
  • 1 pound small shrimp deviened and peeled, tails removed
  • 2 teaspoons lemon zest plus the juice of ¼ lemon
  • 1/4 cup extra-virgin olive oil
  • 6 cloves garlicminced
  • 1 pint cherry tomatoes halved
  • 4 scallions thinly sliced on an angle
  • 1/4 cup white vermouth or 1/3dry white wine eyeball it
  • 2 handfuls fresh flat-leaf parsley chopped
  • 20 fresh basil leaves torn or shredded
  • Coarse black pepper

Instructions
 

  • Heat large pot of water for the pasta.
  • When the water boils, salt it and cook the pasta al dente.
  • Heat a large non-stick skillet over medium to medium-high heat.
  • Season the shrimp with the lemon zest, lemon juice, and a little salt.
  • Add the EVOO to the hot pan and then add the shrimp.
  • Cook for a minute, then add the garlic, tomatoes, and scallions and toss, cooking for another minute or two until the shrimp are firm and pink.
  • Add the white vermouth and the herbs. Turn off the heat.
  • Drain the pasta well and add to the sauce.
  • Toss and combine the sauce with pasta and season with salt and black pepper.

Ingredients
  

  • 1 lb ground beef
  • 1-1/2 cups green peppers
  • 1 large onion finely chopped
  • 1 can tomato soup
  • 1 small can tomato sauce
  • 1 14 oz can creamed corn
  • 2 tsp chilli powder
  • 1 tsp dry mustard
  • 1/2 pkg pasta cooked
  • grated cheese to taste

Instructions
 

  • Brown the beef then add both the onion and the green peppers and cook until soft.
  • Add the liquids to the ground beef mixture then add the noodles.
  • Place into a casserole dish and grate cheese over the top.
  • Bake for 45mins at 350°F

Baked Sausage Stuffed Shells

Ingredients
  

  • 16 jumbo pasta shells
  • 2 tbs olive oil
  • 1 onion finely diced
  • 1 green pepper finely diced
  • 2 cloves garlic
  • 1 lb mild Italian sausages casings removed
  • 1 egg
  • 1/4 cup chopped parsley
  • 2 cups bottled tomatoes strained
  • 1 tsp dries oregano
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions
 

  • In a large pot of boiling water, cook pasta until tender but firm. Drain
  • In a skillet, heat olive oil over medium heat; cook onion, green pepper and garlic until softened, about 6 mins. Transfer to a bowl; stir in sausage, egg and parsley. Place heaping 1 tsp in each of the shells. Arrange in greased 8-inch square glass baking dish.
  • In a bowl, stir together tomatoes,oregano and salt; spoon over stuffed shells. Sprinkle with mozzarella and Parmesan cheeses; cover and bake in 425F over for 20 mins.
  • Uncover and bake until cheese is golden brown.

Notes

You can use a ready made pasta sauce if you don't have a can of tomatoes or the spices

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped (about 1/2 cup)
  • 1/8 tsp garlic powder OR 1 clove garlic minced
  • 1 can Campbell’s Golden Mushroom Soup
  • 1 can Campbell’s Condensed Beef Broth
  • 1 can diced tomatoes 14 1/2 oz.
  • 1 small zucchini sliced (about 1 cup)
  • 1/2 tsp dried thyme leaves crushed
  • 1 1/2 cups uncooked corkscrew pasta

Instructions
 

  • In medium skillet over medium-high heat, cook beef, onion and garlic until beef is browned, stirring to separate meat. Pour off fat.
  • Add soup, broth, tomatoes, zucchini and thyme. Heat to a boil.
  • Stir in pasta. Reduce heat to low.
  • Cook 15 minutes or until pasta is done, stirring often.

20-minute Chicken & Broccoli Macaroni

Ingredients
  

  • 12 oz macaroni or other small pasta about 2 ½ cups
  • 1 bunch broccoli
  • 1 lb boneless skinless chicken
  • 3 tbsp all purpose flour
  • 2 1/2 cups milk
  • 1 tub flavoured Canadian cream cheese light or regular (sun-dried tomato, roasted red pepper, vegetable), 8 oz
  • 2 tbsp red or white wine vinegar
  • salt and pepper

Instructions
 

  • In large pot of boiling, salted water, cook pasta for about 8 min.
  • Meanwhile, cut broccoli into small florets. Trim stems and cut into slices.
  • Cut chicken into 2” chucks; set aside.
  • Stir broccoli into pasta in pot and cook for 1 minute. Drain and set aside.
  • Whisk flour into Milk and pour into same pot stirring constantly for about 5 minutes or until sauce is thickened and chicken is just slightly pink inside.
  • Reduce heat to low, add cream cheese and return pasta and broccoli to pot.
  • Stir gently until chicken is no longer pink inside, cream cheese is melted and pasta is heated.
  • Stir in vinegar and season to taste with salt and pepper.

Ingredients
  

  • 2 cups uncooked farfalle pasta bow-tie, 4 oz., or other types of pasta
  • 2 cups broccoli flowerets
  • 2 medium tomatoes chopped (1 ½ cups)
  • 1 medium yellow bell pepper chopped (1 cup)
  • 1/3 cup diced red onion
  • 1 cup mayonnaise or salad dressing
  • 1/2 cup plain yogurt
  • 2 tbsp sugar
  • 1/2 tsp curry powder
  • 1 1/2 cups shredded Cheddar cheese 6 oz.
  • 2 tablespoons bacon bits
  • 2 tbsp finely chopped fresh parsley

Instructions
 

  • Cook and drain pasta.
  • Place broccoli in boiling water. Cover and cook 1 minute; drain.
  • Immediately rinse with cold water; drain.
  • While pasta is cooking, layer tomatoes, broccoli, bell pepper and onion in 2-quart glass serving bowl.
  • Mix mayonnaise, yogurt, sugar and curry powder in medium bowl. Stir in pasta.
  • Layer pasta evenly over onion in serving bowl.
  • Sprinkle with cheese.
  • Top with bacon bits and parsley.
  • Cover and refrigerate at least 8 hours before serving but no longer than 24 hours.
