No-Bake Chocolate Cookie Squares

Instructions
 

  • Chop 1 pkg. (8 squares) Baker’s Semi-sweet chocolate; place in medium microwaveable bowl.
  • Add ½ cup butter.
  • Microwave on Medium 2 ½ minutes.
  • Stir until chocolate is completely melted and mixture is well blended.
  • Coarsely break 8 Dad’s Oatmeal Cookies or 8 Oreo Cookies. (You should have about 1 cup broken cookies).
  • Add to chocolate mixture along with ¼ cup chopped nuts; stir until well blended.
  • Spread into foil-lined 8” square plan.
  • Refrigerate at least 1 hour or until firm.
  • Cut into 16 squares to serve.
  • Store in airtight container in refrigerator.

  • 1/2 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup milk
  • 3 cups quick-cooking rolled oats
  • 1 cup shredded coconut
  • 1 tsp salt
  • 6 tbsp cocoa
  • 1 tsp vanilla

Instructions
 

  • Combine butter, sugar and milk in saucepan.
  • Boil for exactly 3 minutes and add remaining ingredients.
  • Blend lightly and drop by teaspoon on wax paper or aluminium foil.
  • Chill.
  • Store in a covered container in a cool place.

Cake

  • 2 cups flour
  • 1 3/4 cup sugar
  • 1/2 cup cocoa
  • 1/2 tsp salt
  • 1 tbsp baking soda
  • 1 egg
  • 2/3 cup salad oil
  • 1 cup sour milk place 1 tbsp vinegar in sweet milk
  • 1 cup strong boiling coffee

Frosting

  • 2 tbsp ½flour
  • 12 cup milk
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 1/2 cup soft butter
  • 2 tbsp cocoa

Instructions
 

Frosting

  • Cook to a smooth paste 2 ½ tbsp. flour and 12 cup milk.
  • Refrigerate until cold.
  • Combine with chilled paste, and blend together 5 minutes

Cake

  • Stir dry ingredients together.
  • Add egg, oil and milk. Mix well.
  • Stir in coffee. Mixture will be thin.
  • Bake 40 minutes at 350ºF in a well-greased 9x13” pan.
  • Frost cooled cake.
  • Store in refrigerator

Ingredients
  

  • 3/4 cup sugar
  • 1 large egg
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 cup veggie oil
  • 3/4 cup milk
  • 1 tsp vanilla
  • 2 tbs melted butter
  • cup approx 1/2sugar with cinnamon

Instructions
 

  • Preheat oven to 350°F.
  • Lightly grease a muffin tin (I use the mini muffin tin).
  • In a large bowl, beat together sugar and egg until light in colour.
  • In a small bowl, whisk together flour, baking powder, salt and nutmeg.
  • Pour into the egg mixture and stir to
  • combine.
  • Pour in the veggies oil, milk and vanilla and stir together.
  • Divide batter evenly into the muffin tin.
  • Bake approx 10 - 15 minutes.
  • While muffins are baking melt your butter and mix cinnamon into you 1/2 cup of sugar.
  • When the muffins are done lightly brush
  • the top of each muffin with the butter and roll in the sugar to coat.
  • Cool on a wire rack.

  • 1 tbs corn syrup
  • 9 cups oatmeal
  • 1 cup smarties
  • 4 tsp baking soda
  • 1 tsp salt

Instructions
 

  • Combine all ingredients together and drop by the tbs on a cookie sheet and bake at 350°F for 10mins

Substitute the Smarties for M&M's and these cookies are Gluten Free

Ingredients
  

  • 4 eggs
  • 2 cups granulated sugar
  • 3/4 Miracle Whip dressing
  • 1 can pumpkin 14 oz
  • 1 cup chopped pecans
  • 2 3/4 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon

Instructions
 

  • Heat overt o 400ºF.
  • Beat eggs and sugar with electric mixer on medium speed until well blended.
  • Stir in dressing, pumpkin and pecans; mix well.
  • Mix flour, baking soda, salt and cinnamon.
  • Stir flour mixture into pumpkin mixture.
  • Beat 2 minutes on medium.
  • Spoon batter into greased or paper-lined muffin pans, filling half full.
  • Bake 15-20 minutes or until toothpick inserted in centre comes out clean.
  • Cool 5 minutes; remove from pans.

  • Mix dry ingredients then add Miracle Whip and cold water.
  • Pour into a 8" or 9" round pan and bake at 350°F for 35mins

Mini-Cheesecake Tarts

Ingredients
  

  • 16 oz cream cheese – softened 2 large pkg
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla
  • vanilla wafers
  • cups Foil baking medium

Instructions
 

  • Beat cream cheese, sugar, eggs, lemon juice and vanilla until light & fluffy.
  • Line tart (or muffin) tins with foil cups. Place one vanilla wafer in each cup.
  • Fill cups 2/3 full.
  • Bake at 375ºF for 18-20 minutes.
  • Cool. Can be frozen at this point.
  • To serve, decorate tops with jam, fresh fruit, cherry pie filling, lemon spread, etc.
  • Makes about 36 medium tarts.

Notes

Tops will sink a little after baking.

  • 1 cup shortening
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 cup confectioner’s sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups all-purpose flour sifted
  • 3 tsp baking soda
  • 1 tsp salt

Instructions
 

  • Preheat oven to 350ºF.
  • Cream the shortening, peanut butter, and sugars together.
  • Beat in eggs and vanilla.
  • Sift the flour, soda and salt together, and add gradually to the creamed mixture.
  • Beat well.
  • Drop from a teaspoon onto ungreased cookie sheets.
  • Flatten with a floured fork.
  • Bake at 350ºF for 12-15 minutes.
