Cranberry Squares
Ingredients
- 1 1/2 cups rolled quick cooking oats
- 1 1/2 cups flour
- 1 1/2 cups firmly packed brown sugar
- 1 tsp baking powder
- 3/4 cup cold butter
Instructions
- Preheat over to 350ºF.
- Mix oats, flour brown sugar and baking powder in large bowl until well blended.
- Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
- Press 2/3 of the oat mixture firmly onto bottom of 9” square baking pan.
- Spoon Brandied Cranberry Sauce over crust; sprinkle with remaining oat mixture.
- Bake 30 minutes.
- Cool completely.
- Cut into 20 squares to serve.
BRANDIED CRANBERRY SAUCE:
- Preheat oven to 300ºF.
- Place 4 cups fresh or frozen cranberries in 13x9” baking dish.
- Sprinkle evenly with 2 cups sugar.
- Cover and bake for 1 hour.
- Remove from oven.
- Stir carefully, then stir in 1/3 cup brandy or orange juice.
- Pour into jars or serving dishes.
- Store in refrigerator up to 3 weeks.
