Rice Pudding (Skinny Version)
Ingredients
- 2 cups 2% milk
- 2 cups cooked white rice
- 1/4 cup honey
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1/3 cup raisins
- 1/2 cup egg substitute
- 2 tsp vanilla
Instructions
- Combine first 7 ingredients in large pot.
- Simmer for 15 minutes.
- Measure egg product and ½ cup hot mixture – add to eggs and stir into saucepan.
- Stir until thickened.
- Stir in vanilla.
- Cover with plastic wrap.
