Fish Risotto
Ingredients
- 2 oz butter
- 1 large onion
- 1/2 green pepper
- 1/2 red pepper
- 2 tbsp tomato puree
- 1 garlic clove
- 1 tsp dried mixed herbs
- 2 oz mushrooms
- 12 oz long grain rice
- 1 1/2 pints hot chicken stock
- salt
- 1 1/2 lbs fish fillets
Instructions
- Place butter, onion, peppers, tomato puree, garlic, herbs and mushrooms in a large microwavable casserole dish.
- Cover and cook for 10 minutes stirring halfway.
- Stir in the rice, stock and salt.
- Cover & cook for 13 minutes.
- Place fillets in a shallow microwaveable dish.
- Cover and cook for 7 minutes re-arranging halfway through.
- Flake the fish & stir into rice mixture.
- Heat through.
