Fish Risotto

Fish Risotto

Ingredients
  

  • 2 oz butter
  • 1 large onion
  • 1/2 green pepper
  • 1/2 red pepper
  • 2 tbsp tomato puree
  • 1 garlic clove
  • 1 tsp dried mixed herbs
  • 2 oz mushrooms
  • 12 oz long grain rice
  • 1 1/2 pints hot chicken stock
  • salt
  • 1 1/2 lbs fish fillets

Instructions
 

  • Place butter, onion, peppers, tomato puree, garlic, herbs and mushrooms in a large microwavable casserole dish.
  • Cover and cook for 10 minutes stirring halfway.
  • Stir in the rice, stock and salt.
  • Cover & cook for 13 minutes.
  • Place fillets in a shallow microwaveable dish.
  • Cover and cook for 7 minutes re-arranging halfway through.
  • Flake the fish & stir into rice mixture.
  • Heat through.
